GOODNESS: Recipes & Stories
by Peter & Chris Neal

Goodness: Recipes & Stories celebrates 37 good food fighters from across Canada—chefs, entrepreneurs, growers, and food activists who believe that good, healthy food should be accessible to all. Each of their stories underlines the simple truth: food has the power to enrich lives and build strong communities. From supporting sustainability to promoting access, outreach, and education, these individuals serve up goodness every day—and here they share some of their favourite recipes too!

A highlight from the book is the piece by Kicking Horse Coffee Co-Founder and CEO, Elana Rosenfeld, who is passionate about doing business with a purpose. Watching her mother pioneer a gourmet food business in Toronto in the 1970’s, Elana developed her own interest for the fine food industry. After studying at McGill University in Montreal, a dream of living in the mountains drew her west, to the East Kootenay town of Invermere, BC. Elana launched a series of ventures, including a seasonal fruit stand and a whole food café, before discovering her true passion in the coffee roasting business. Today, Kicking Horse Coffee is Canada’s #1 Organic Fairtrade Coffee, recognized nationally and abroad for its exceptional quality, “Kick Ass” taste and playful brand. Her story, together with recipes for Rocky Mountain Scones and Gluten-free cookies, appears on pg. 76.
